Cover Letter Templates for Every Chef Level: Commis to Head Chef
A good cover letter for a restaurant job is short, specific, and focused entirely on what you bring to the kitchen — not what the kitchen will do for your career. The sweet spot is 150–180 words: long enough to show you've done your homework, short enough that a busy chef de cuisine will actually read it.
The templates below are designed for four career stages: commis, chef de partie, sous chef, and head chef. Each one follows the same core rules but shifts tone, emphasis, and evidence to match where you are. Copy what you need, customise the bracketed fields, and send.
The Rules (Apply to All Levels)
Before you write a single word, get these fundamentals right.
Keep it under 180 words. Anything longer signals you can't edit yourself — not a quality kitchens look for. Count before you send.
Name the restaurant specifically. Not "your restaurant" or "your establishment." Use the full name. Then add one concrete detail that proves you've actually engaged with what they do: a dish from a recent menu, a technique they're known for, a philosophy their head chef has spoken about publicly.
State your relevant experience clearly. One or two sentences. The stage you did, the section you ran, the covers you handled. Be precise.
Lead with what you offer, not what you want. "I would love the opportunity to learn from your team" is a sentence about you. "I can bring solid knife prep and pastry cross-training to your morning brigade" is a sentence about them. Write the second kind.
Include your availability. Start date, notice period, willingness to do a trial shift. Make it frictionless to say yes.
Template 1: Commis Chef
Who it's for: Recent culinary school graduates, career changers completing their first qualification, or early-career cooks with limited professional experience but strong stage credits.
What to emphasise: Eagerness to learn is expected — every junior applicant says it. What separates the good letters is specificity. Name the techniques you're confident in. Mention any stage experience, even if brief. Show you understand where you're applying.

Template 2: Chef de Partie
Who it's for: Cooks with two to four years of experience, comfortable running a section independently and managing prep without supervision.
What to emphasise: Section mastery is the core credential here. Be specific about which sections you've owned, which cuisines or techniques you've developed depth in, and how you perform under pressure. A CDP letter should read like a confident professional — not someone still discovering what they can do.

Template 3: Sous Chef
Who it's for: Senior cooks stepping into or continuing in sous chef roles, typically with five or more years of professional experience including leadership responsibilities.
What to emphasise: At sous chef level, you're being assessed not just as a cook but as a manager. Your letter should reflect that. Mention specific leadership contributions — training junior staff, covering for the head chef, contributing to menu development — and wherever possible, quantify your impact. Numbers and outcomes carry weight here.

What to emphasise: At this level, you're not applying for a job in the conventional sense — you're making a professional proposition. The focus shifts to vision, team-building, cost control, and what you would bring to the restaurant's identity. The tone should be collaborative but direct. You're not asking for an opportunity; you're proposing a working relationship.

What to Customise in Each Template
Every template above has fields you must replace before sending. Here's what matters most:
Restaurant name — Always use the full name. Never a generic placeholder.
Chef's name — Find it. Check the restaurant's website, their Instagram, The Good Food Guide, or a recent press feature. "Dear Head Chef" is a red flag.
A specific dish or technique you admire — This is the most important customisation. Pick something real — a dish from a recent menu, a technique from an interview the chef gave, an ingredient philosophy you've read about. Vague admiration ("I've always loved your restaurant's style") reads as filler. One precise reference reads as research.
Your most relevant experience — Don't list everything. Pick the one or two things most applicable to this specific kitchen and lead with those.
Availability — Start date, notice period, trial shift willingness. Make it easy for the hiring chef to take the next step.
